Good conch fritters are hard to find. I love fritters with chunks of conch and spices that excite your mouth. This is my version of a local favorite offered at Hemingway’s, a restaurant in St. Johns, Antigua. Rum and Brown Sugar Marinated Steak
For our Rum and Brown Sugar Marinated Steak recipe, you can use practically any cut of steak. My favorite cut is the New York strip (aka shell, top loin or strip steak), but I chose a flank steak here to demonstrate another option. The flank steak can be put in a large Ziplock bag and marinated in the fridge for a longer period. Just remember to bring the steak back to room temperature before grilling. Dessert Crepes - Caribbean Style (with a Butter Rum Sauce)!
Every Sunday my friend Carole makes crepes for her family and friends. I've been thinking about all the different things one could fill these tasty pancakes with, so i decided to make use of the local fruit. To make the crepes I used a 10 inch omelet pan to make the crepes. Note: It would be a mistake to eat these crepes without the butter rum sauce flavored with your own local dark rum (It has to be dark so my apologies to my French island friends).
