CLASS DESCRIPTION

April's menu borrows from East Indian influences on Caribbean cuisine. I've organized the menu to celebrate flavours I love right down to the Kale salad. I hope you will join me for some Foodie fun on the 18th!👍👍

The next class will be held on Saturday, April 18th, starting at 12 Noon AST (12 AM ET and 4 PM UK time). Look for posts on our Facebook and Instagram pages discussing each upcoming class.

Classes usually takes around 3 hours from start to finish. After you sign up, we email the prep packet, recipe booklet and shopping list the Wednesday before the class. This information makes it as easy as possible for you to buy your ingredients, and get some of the prep work done before class. I then talk through the recipes as we prep and cook together.

Sign up, grab a drink, and prepare for a good time. We love cooking with foodies because it leads to good fun, humor and often a bit of story telling. Finally, if you want a West Indian drink, you can make my Old Fashioned Rum Punch in advance of the class for a taste of the Caribbean!🥰🍹 However, in this class, we will share a classic Martinique Ti' Punch recipe in case you want to go all in.

October 2022 – Love cooking with Nicole – prefer it in person at her beautiful home but this felt pretty close! Had a really, fun time learning some new tips and dishes. From what I saw, everyone had a great time and was very engaged in each step of the creating, preparing process. Looking forward to my next creating/cooking class with Nicole!

October 2022 – I attended the class for learning to cook jerk chicken kabobs and rice and bean/plantain side dishes with a coconut pudding as the finishing touch! Nicole guided a simple and comprehensive preparation with mouthwatering results! She provided the class with a shopping list and instructions. As the chef and instructor, Nicole was warm, funny and encouraging! She had a great sense of timing that was very punctual but relaxed. You enjoyed the process and felt engaged and appreciative of bringing the flavors of the Caribbean into your home. Nicole is an expert with seasonings and improvisation as well! Treat yourself to one of her classes, either in-person or online like I did. Thoroughly enjoyable and rewarding!

October 2022 – I attended the Jerk Chicken cooking class and the meal turned out fabulous! Nicole’s instructions and recipes are clear and authentic. She adds some good humor as well, so the class was lots of fun. My family’s favorite dish was the coconut tart – oh my – so good! Looking forward to the next class!
