Cuban Mojo Chicken

We have some Cuban friends that we've known for years and their Mojo chicken was absolutely fantastic. This recipe is for those of you who like Mojo Chicken, or want to give it a try. Enjoy!🥰
¼ Bell pepper
9 Cloves garlic crushed
½ Bunch Cilantro
1 Teaspoon cumin
½ Cup sour orange juice
¼ Cup Extra virgin olive oil
Making the Cuban Mojo Chicken
Take the ingredients and put them in blender and process till smooth.
Generously salt and pepper the chicken.
Pour the marinade over the chicken, making sure to coat the whole chicken.
Cover the chicken and let it marinade for at least 1 hour at room temperature, or overnight in the fridge for a little more love and kindness.
Preheat oven to 425o F (218o C).
Slice a large onion and place it on the bottom of the baking dish.
Place chicken on top of the chopped onion and pour in remaining marinade.
Bake for 20 minutes. Reduce oven to 400o F (204o C) and bake 35-45 minutes until the internal temperature in the thigh is 165o F (74o C).
Remove from oven, and let rest for 10 minutes before carving.
Serve with rice and black beans and garlic green beans.
Enjoy!
