Oven Roasted Sweet Plantains

Mini Pineapple Upside Down Cheese Cakes

In the islands we eat plantains in a whole series of ways... fried as part of a breakfast... as a base for an appetizer... and even as a dessert.  As a close relative of the banana, plantains have excellent nutritional value with GI carbohydrates, dietary fibre, and vitamins and minerals.


A few things that are important to know about plantains before you start: 1. When plantains are green, they are very starcy so they can't be used for this recipe; 2. For this recipe, you want you're plantains at their ripest and at their sweetest point, so only pick plantains that feel soft and have yellow skins wither large black sections across them.


Making the Oven Roasted Sweet Plantains

All you need to start with is 4 Ripe plantains! That's it!


Preheat the oven to 350oF (177o C). Peel the plantains and cut them into 1 inch thick chunks.  


Place the plantain pieces on a baking sheet, and roast in a preheated oven for 40 minutes.


That's it. Bam! They're ready to eat!
