Rice and Peas (aka "Red Beans and Rice")

This simple food extends across the Caribbean from culture to culture. Whether you call it "Rice and Peas" or "red beans and rich", this staple dish is a great source of starch and protein, and serves as an excellent partner to almost any meat dish (thus why you see it here).😋
2 teaspoon minced garlic
½ cup finely chopped onion
½ bell pepper diced, or a handful of seasoned peppers, diced
1 tablespoon olive or coconut oil
1 cup rice
1 cup partially cooked red kidney bean
½ teaspoon thyme
1 teaspoon salt
2 cups coconut milk
Making the Rice and Peas (aka "Red Beans and Rice")
Cook peppers and onion in hot oil, add a pinch of salt. Sauté until just browned, add the garlic, and cook for 1 minute. Next add coconut milk and beans, rinse the rice in cold water to get rid of the extra starch, and then add to the pot.
Add thyme, salt, and bring to a boil. Cover lower heat, and simmer for 20-35 minutes until rice is tender and liquid is absorbed. Add more liquid if needed.
Adjust seasoning to serve.
