Mini Pineapple Upside Down Cheese Cakes

This recipe was inspired by a picture posted on Pinterest, and I had to try it!!  This is my version...  And, yes, it isn’t Haitian, but it is tasty!🥳   


  • 1 cup crushed pineapple, drained 

  • 1/2 cup brown sugar 

  • 1 cup graham cracker crumbs 

  • 1/2 cup unsalted butter, melted 

  • 16 oz cream cheese, softened 

  • 1/2 cup granulated sugar 

  • 1 teaspoon vanilla extract

  • 2 large eggs 


Making the Caramel Sauce to Garnish…

Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.


In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until well combined.  Press the mixture firmly into the bottom of each cupcake liner to form a crust.


Preparing the Pineapple Layer…

In another bowl, mix the drained crushed pineapple with the brown sugar.   Slightly brown the pineapple mixture, and spoon it over the crust.  If you want extra caramelization, you can brown the pineapple mixture to your preference before adding it to the crust.


Making the Cheesecake Filling…

In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.


Add the eggs one at a time, mixing on low speed until just combined after each addition.


To assemble, spoon the pineapple mixture evenly on top of the crusts in the muffin tin.


Next, pour the cream cheese mixture over the pineapple layer, filling each liner nearly to the top.


Bake for about 20-25 minutes, or until the cheesecakes are set and slightly firm in the center.


Allow the cheesecakes to cool completely on a wire rack, then chill in the refrigerator for at least 2 hours before serving.  


Finally, before serving, top each cheesecake with a maraschino cherry for a colorful touch!
