Mini Passion Fruit Cheesecake

This little slice of heaven isn’t just good to eat, and good for the soul, it can be gluten free too!  No kidding!  Incredible!🥰


The Mini Passion Fruit Cheesecake Crust...

  • 1 Cups blanched almond flour

  • ¼ Cup granulated sugar

  • Pinch salt

  • 1 Tablespoon lemon zest

  • 3 Tablespoons butter, melted and cooled


The Filling...

  • 1 Pound cream cheese 

  • ¼ Cup granulated sugar

  • 1 Teaspoon vanilla

  • 2 Large eggs, room temperature


The Garnish...

  • Passion fruit and powdered sugar... that's it!


Preheat the oven to 350o F / 177o C, and line a muffin tin with 12 liners.


To prepare the crust, place the almond flour, salt and lemon zest in a medium mixing bowl and stir them together.  Mix in the melted butter until the ingredients are thoroughly combined.  Divide the crumb mixture between the liners, about 3 teaspoons per liner.  Press down the mixture with the bottom of a shot glass, and bake for 10 minutes, the crust should be very light brown.  Remove from the oven and cool for 10 minutes.


To prepare the filling, using an electric mixer, beat the cream cheese and the sugar until light and creamy.  Add the vanilla and salt and beat until well combined.  Next on a low speed, add the eggs one at a time, mixing until just combined.  Making sure not to over mix.


Fill each liner 2/3's full with batter, and bake for 10 minutes until the center of the cheesecakes don't jiggle when the pan is moved.  Turn off the oven and open the oven door about 1 foot wide and let the cheesecakes cool to room temperature, about 1 ½ hours.


Chill the cheesecakes for at least 2 hours before serving.  Decorate the cheesecakes with passion fruit and a dusting of powdered sugar.


***For easiest removal, it is best to remove the liners from the cheesecakes when they are removed from the oven.  The liners can be removed after chilling but the cheesecake may stick to the liner.
