Nicole's Rich and Scrumptious Corn Bread

This very rich corn bread recipe was rolled out in our November 2025 Zoom class, a class which roughly explored Cuban cooking with the corn bread included in response to a request from one of our regulars. (Scott, this is your doing!)
This simple recipe is sooo good. It is very rich, full of chunks of corn, and really doesn't need anything more… (except maybe a big slab of salted English butter!).
Making the Corn Bread...
⅔ Cup flour
½ Cup cornmeal
⅓ Cup sugar
1 Tablespoon baking powder
½ Teaspoon salt
1 Can Whole corn
1 Can cream style corm
2 Eggs
½ Cup melted butter
½ Cup sour cream
Preheat the oven to 350°F (177°C), and grease an 8"x8" baking dish.
Mix all the dry ingredients in a large bowl.
In a smaller bowl, combine all the wet ingredients, including the corn. Fold the wet ingredients into the dry ingredients. Pour the mixture into the prepared baking dish and smooth the top.
Bake for 1 hour.
